Well, it’s January and you know what that means, RESOLUTIONS! Yours may be to exercise more, lose weight, eat healthier, or any one of the many things we tell ourselves we are going to do better. If your resolution is to eat healthier, but you still need your chocolate fix, these brownies, from CookingKatyLady.com, are for you.

LOW CALORIE GREEK YOGURT BROWNIES

INGREDIENTS

• ¾ cup flour (oat or all-purpose)

• ½ cup cocoa powder (unsweetened, good quality)

• ½ cup monk fruit (cane sugar substitute)

• 1 tsp. baking powder

• ¼ tsp. salt

• 1 cup Greek yogurt (1 heaping cup of plain, nonfat Greek yogurt)

• ½ cup almond milk (unsweetened)

• ¾ cup dark chocolate chips (low sugar type – Hu is a brand I use)

INSTRUCTIONS

1. Preheat your oven to 350 degrees. Line an 8×8 inch glass baking dish with parchment paper or spray with non-stick spray and set aside.

2. In a large bowl, whisk together all of the dry ingredients. Mix in the wet ingredients and mix just until fully incorporated. DO NOT over mix. The batter should be fairly thick, but you can add another splash of almond milk if it seems too thick.

3. In a microwave-safe bowl melt the chocolate chips (add a little bit of coconut oil, if needed). Pour into your brownie batter and gently fold in.

4. Transfer the batter to your prepared baking dish and top with more chocolate chips if desired. Bake the brownies for 30-35 minutes. Remove from the oven, let them cool and enjoy!

NOTE: This recipe makes 12 brownies, 90 calories each, with no refined sugar.
