CRANBERRY PISTACHIO FUDGE
INGREDIENTS
- 3 cups white chocolate chips ( I use Ghirardelli)
- 1 (14 oz.) can sweetened condensed milk
- 1/4 cup unsalted butter
- 1 teaspoon vanilla extract
- 1 cup dried cranberries
- 1 cup shelled pistachios, roughly chopped
DIRECTIONS
Line an 8×8-inch baking pan with aluminum foil or parchment paper, leaving some overhang for easy removal. Lightly grease the foil or paper. In a medium saucepan, combine the white chocolate chips, sweetened condensed milk, and butter over low heat. Stir continuously
until the chocolate is completely melted and the mixture is smooth. Remove from heat and stir in the vanilla extract. Fold in the dried cranberries and chopped pistachios until evenly distributed. Pour the fudge mixture into the prepared pan, spreading it evenly. Refrigerate for at least 2 hours or until firm. Lift the fudge out of the pan using the overhanging foil or parchment paper. Cut into squares and serve.
